Garlic & Herb Crusted Baked Cod

INGREDIENTS
4 cod filets
MARINADE
¼ cup extra virgin olive oil
1 tablespoon coconut aminos
2 teaspoons honey
2 teaspoons chopped fresh Italian parsley
2 teaspoons chopped fresh chives
1 ½ teaspoons fresh thyme
1 teaspoon minced garlic
¾ teaspoon lemon zest
½ teaspoon real salt
¼ teaspoon ground black pepper
GARNISH (optional)
Lemon wedges
Fresh chives, parsley & thyme
PREPARATION
Prepare Roasted Root Vegetables.
Meanwhile, place cod in a shallow dish. In a small bowl, whisk together all marinade ingredients. Pour over cod, cover, and refrigerate for at least 30 minutes, or up to 8 hours.
Preheat the oven to 400°F. Coat a 9x13” casserole dish with cooking spray. Place the cod filets into the prepared dish. Spoon the marinade over the fish. Bake for 10-11 minutes or until opaque and just cooked through. Turn on the broiler to high. Broil for 3-4 minutes or until the edges of the cod are browned.
Serve immediately over Roasted Root Vegetables and garnish with lemon wedges and fresh herbs.
