Garlic & Herb Crusted Baked Cod

INGREDIENTS

MARINADE

  • ¼ cup extra virgin olive oil 

  • 1 tablespoon coconut aminos 

  • 2 teaspoons honey 

  • 2 teaspoons chopped fresh Italian parsley 

  • 2 teaspoons chopped fresh chives 

  • 1 ½ teaspoons fresh thyme 

  • 1 teaspoon minced garlic 

  • ¾ teaspoon lemon zest 

  • ½ teaspoon real salt 

  • ¼ teaspoon ground black pepper 

GARNISH (optional) 

  • Lemon wedges 

  • Fresh chives, parsley & thyme 

PREPARATION

  1. Prepare Roasted Root Vegetables

  2. Meanwhile, place cod in a shallow dish. In a small bowl, whisk together all marinade ingredients. Pour over cod, cover, and refrigerate for at least 30 minutes, or up to 8 hours. 

  3. Preheat the oven to 400°F. Coat a 9x13” casserole dish with cooking spray. Place the cod filets into the prepared dish. Spoon the marinade over the fish. Bake for 10-11 minutes or until opaque and just cooked through. Turn on the broiler to high. Broil for 3-4 minutes or until the edges of the cod are browned. 

  4. Serve immediately over Roasted Root Vegetables and garnish with lemon wedges and fresh herbs.
